Tabbuli

2 heads iceberg lettuce, shredded fine

1/2 c. small bulgur wheat

1 bunch fresh parsley, chopped fine

3 tomatoes, chopped fine

1 c. cold water

4 green onions, chopped fine

1 cucumber, chopped fine

Juice of 2 large lemons

2 Tbsp. olive oil

1 Tbsp. crushed mint (optional)



Soak bulgar wheat in cold water until soft. When soft, squeeze out excess water. Mix all vegetables together; add bulgur. Mix with lemon and oil; toss thoroughly.Salt and pepper to taste. Serve right away.
